2kg of pork belly air dried overnight and roasted on high heat to get the crispy crackling before reducing the temperature to slow roast the meat over bed of vegetables until moist and juicy.
The beautiful fats and juices from the pork rack drip down and flavour the vegetables.
Served with a variety of fresh seasonal sides.
Go well with any of our recommended red wines below.
