Legend Wanton Mee
Tucked away in Maddox Canteen within Jalan Bukit Merah's bustling industrial estate, Legend Wonton Mee is worth seeking out. It is the brainchild of Aaron Wong, a name you might recall from the first season of MasterChef Singapore.
For a reasonable $5.50, you are served a modest but filling plate. You get a tangle of dry noodles, three sizeable boiled wontons, a quartet of char siew slices, and a fresh stalk of Caixin green. For an extra $2, you can upgrade to double the char siew, an option well worth considering.
Legend’s noodles are decent, closely resembling the pale yellow Sarawak Kolo Mee variety. Lacking the usual dark sauce or accompanying broth, they are instead lightly coated with pork lard and a mild sauce. The result is a serviceable, springy noodle that knows its place in the ensemble.
Let's move on to the wontons, which are without doubt the high point of the dish. Each parcel is plump to the touch, filled with an unexpectedly generous helping of succulent meat which carries a distinct dried sole fish flavour that catapults these wontons into a league of their own. The flavour bursts in your mouth, almost as if each wonton is competing to be better than the last. The generosity of the filling is such that it conjures memories of homemade wontons, the kind where every bite is a little celebration.
While the char siew slices boast an appealing aesthetic with their pork belly cut, they falter on execution. Sliced too thinly for substantial texture, its marinade leans excessively towards soy, missing the sweeter notes that would have made it more balanced.
The soup that accompanies the meal sadly lacks depth, offering an artificial sweetness that misses the mark on umami. However, the quick and efficient service ensures that you won’t be left waiting, making the overall experience better than most.
In a nutshell, Legend Wonton Mee is a destination for wonton enthusiasts. Though the char siew could use some tweaking, the wontons alone make this a culinary excursion worth undertaking.
