Manbae Arirang

We ended our Korea trip with one last memorable meal before heading to the airport.

Manbae Arirang specialises in bossam, where pork belly is slowly simmered until incredibly tender. What makes it unique here is the use of the gabeurisal, a prized cut from the pig's cheek that is only available in limited quantities from each animal. Leaner than pork belly but still beautifully succulent, it has a wonderful bite without being overly rich.

The best way to enjoy it is the Korean way. Wrap a slice of the pork with spicy radish kimchi and boiled napa cabbage. The combination of tender pork, crunchy cabbage and the sweet, spicy kick of the radish creates a perfect balance of flavours and textures. Simple, yet so satisfying.

The meal also came with a comforting seafood noodle soup, filled with fresh crab, clams and vegetables. The clear broth was naturally sweet from the seafood, making it the perfect companion to the bossam. It felt wholesome and nourishing, almost like a warm farewell from Korea.

As our final meal in Seoul, it couldn't have been more fitting. No fancy presentation or modern twists. Just honest, comforting Korean food prepared with care.
