Shirazi at Dempsey Hill

Persian cuisine is not something I get to enjoy very often in Singapore, so a recent visit to Shirazi at Dempsey Hill was a nice opportunity to explore its flavours. Surrounded by Dempsey's lush greenery, the restaurant offers an elegant setting inspired by Persian art and decorative traditions.

Behind Shirazi are Chef Mohammad Hosseini and Chef Ying, whose culinary partnership spans two decades. Originally from Zanjan, Iran, Chef Mohammad began his culinary journey around the city's historic Grand Bazaar before gaining experience across the Middle East, Singapore and Australia. Selected spices and ingredients are sourced directly from Iran to preserve the authenticity of the cuisine.

We started with some colourful drinks and a Cold Mezze Platter featuring Zeytoon Parvardeh, Hummus, Salad Olivieh and Labneh. Served with freshly baked sesame pita, my favourite was the Labneh, a thick, creamy strained yoghurt with a lovely tanginess. Simple yet delicious, especially with the warm pita!

Next was the refreshing Watermelon Salad with greens, walnuts and cheese, providing a pleasant contrast before the heavier dishes arrived.

The centrepiece was a generous Mixed Charcoal Grilled Platter. Quite a feast for meat lovers! Shandiz lamb chops, Lamb and Chicken Koobideh, Jujeh Kebab, Prawn Kebab and Beef Lari Kebab. Koobideh is a traditional Persian minced meat kebab, while Jujeh features chicken marinated with saffron and citrus. I like how Persian grilling focuses on aromatic marinades and charcoal rather than heavy sauces.

We also had Ghormeh Sabzi, a traditional Persian stew of lamb, herbs, kidney beans and dried lime. A distinctive combination of earthy herbal flavours and gentle sourness.

Accompanying the meats was Zereshk Polo, fluffy saffron rice scattered with tart barberries and pistachios. I particularly enjoyed how the barberries provided little bursts of acidity to balance the richness of the meats.

Dessert was Faloodeh Shirazi, delicate Persian rose vermicelli served with saffron and pistachio ice cream. Certainly something different from our usual desserts!

Shirazi operates a Muslim-friendly kitchen, using halal-certified meat and poultry from recognised suppliers, making it a welcoming option for different dining groups.

From fragrant saffron and fresh herbs to charcoal grilled meats and tart barberries, Persian cuisine has its own fascinating identity. An enjoyable introduction to these flavours, made even better with good company and plenty of dishes to share!
