Sin Ming Hainanese Chicken Rice stall, which was previously located in the same Sin Ming Road coffee shop as the famous Sin Ming Roti Prata, has recently moved to an air-conditioned shop in Bishan.
On top of their popular roasted and white chicken rice, the menu at the 70-seat eatery has been expanded to include more than 20 Zhi Char dishes.
"Our main focus is still our chicken rice. So we are very selective and careful with our Zi Char menu to include only "Xiao Chao" (small or light Zhi Char dishes) and not "Da Chao" (big or heavy) dishes," explained Dynn Hui, the lady boss.
"The day we signed the tenancy agreement in June to take over this shop was also when the Malaysian Authority imposed an export ban on live broiler chickens to Singapore! So we started experimenting with Kampong chickens and after many trials and throw-aways, Kelvin (Dynn's hubby chef) was finally satisfied with the recipe and started using them during the ban period," added Dynn.
Some regulars really enjoy their Kampong chickens so they have decided to retain it on their weekend menu.
I am impressed with the chickens, both the poached and roasted versions. The poached chicken is cooked to perfection, the meat is moist and flavourful. As roasted chickens are actually fried in oil to achieve the brown skin, the meat tend to be drier in most chicken rice stalls but here they are able to keep the meat flavourful yet tender, even the breast meat. The chicken rice chili deserves special mention too for the addition of kaffir lime leaves gives the sauce an intense citrus fragrance.
The Zhi Char dishes are cooked by another chef. I enjoyed both the Crispy Fermented Pork Chop and the Sambal French Bean that we ordered. They added variety to the meal without stealing the limelight from the chicken rice, which was still the star of the meal.
