Dusk Restaurant & Bar

Perched atop Mount Faber, Dusk Restaurant & Bar enjoys one of the more picturesque dining locations in Singapore, overlooking the harbour and Sentosa. With such a lovely setting, expectations naturally go beyond just the food.

First impressions were a little mixed. While the view was impressive, the table setting felt rather too casual for a restaurant serving food at this level. Cutlery was simply placed in a basket on the table, without even cloth or paper napkins provided. Nothing wrong with casual dining, but a little more attention to these details would have made the experience feel more complete.

Thankfully, the kitchen delivered a better impression.

We started with the Jamón Ibérico Croqueta, golden and crisp on the outside, followed by the Hokkaido Scallops with pickled cauliflower, crispy quinoa and roasted hazelnut romesco. The scallops were nicely seared, with the quinoa adding texture and the romesco bringing a nutty richness. Just two pieces on the plate, though, which left us wishing for a little more.

For mains, the Grilled Swordfish came with braised fennel, crispy Ibérico ham and a herb and caper reduction. A thoughtful combination of flavours, with the ham adding a savoury contrast to the fish.

The Ibérico Pluma, served with piquillo pepper and roasted hazelnut romesco, was another well executed dish. The pork shoulder was nicely grilled, with the peppers and romesco complementing its natural richness.

We also shared the Mediterranean Seafood Rice, presented in a large pan with grilled octopus, clams and roasted beef bone marrow. A hearty and visually appealing dish that brought the meal to a satisfying close.

Overall, I thought the food was competently prepared and nicely presented. The kitchen clearly has the ability to deliver, while the beautiful surroundings add another dimension to the dining experience.

My only wish is for the table setting to receive the same attention as the food. A few simple improvements would certainly elevate the overall experience.

Dusk is undoubtedly a lovely spot to enjoy dinner with a view, especially around sunset. Although with the current hazy conditions, enjoying that spectacular panorama might require a little help from Mother Nature and our beloved neighbour!
