We were back at Esquina last evening for a one-night-only La Rioja wine dinner. Most of the dishes were off-menu although you might find a couple of them having similarities to some of the regular items.
We started the dinner with this yellowfin tuna tartare served with mentaiko and fennel salad. The celery sorbet is surprisingly delicious and very refreshing.
I especially enjoyed the smoked wagyu beef carpaccio. Raw wagyu beef slices were wrapped around flavourful truffle and onion custard to form a small, meaty mouthful in this innovative beef carpaccio canapé dish. Chef Carlos further elevated his carpaccio dish with fresh truffle slices and jus. Beautiful.
The usual suckling pig was sprinkled with whole pink peppercorn. Something very clever as they are slightly sweet and mild in spiciness, making them a great addition to this traditional dish of Castille.
Glad to find out that the starch side dish for the Pyrenees milk-fed lamb was "Papas arrugadas". I first had this traditional boiled potato dish when one of our Spanish Chef friend from Canary Islands cooked this for us many years ago. The salted potato was served with red pepper sauce (mojo rojo) and cilantro green sauce (mojo verde). So simple but so good.
We have always enjoyed our meals at Esquina and last night was no exception. The talented Chef Carlos Montobbio continues to wow us with his creativity and culinary skills, turning classic Spanish ingredients and dishes into beautiful and delectable plates. Delicioso!
