Another date night, another excuse to explore something a little different. This time, we headed to Latido on Tras Street for the American Express Platinum Table for Two menu. Amex’s Table for Two programme features specially curated multi course menus at selected restaurants, and this was a rather interesting choice for us.
Latido brings Colombian cuisine to Singapore through the mind and hands of Bogotá born Chef Fernando Arévalo, previously behind Preludio and Bacatá. Rather than simply reproducing traditional dishes, he takes the ingredients, flavours and memories of his homeland and gives them a contemporary interpretation.
Our seven course journey started with Pan de la Casa, Latido’s signature rye bread with caramelised onion butter. Then came Ceviche de Arándanos con Aguacate, sashimi grade hamachi with cranberry, avocado and pickled ginger. Bright, refreshing flavours to wake up the palate.
The Carimañola de Jaiba was a cassava fritter filled with crab, served with avocado cheese and rambutan. Crisp outside, creamy and comforting inside. Next was Patacón y Pulpo, grilled octopus with plantain and jalapeño ají. I particularly enjoyed how ingredients such as cassava, corn and plantain kept appearing throughout the meal, giving us a glimpse into the building blocks of Colombian cooking.
The Arepa de Choclo con Lechonita was perhaps the most comforting course. A handcrafted sweetcorn cake with suckling pig, egg and paprika. Sweet corn, rich pork and egg. Not complicated on paper, but very satisfying.
For the main, Pescado a la Parrilla, grilled seabass with chimichurri and coconut rice. Familiar flavours presented through a Colombian lens before we ended on Chocolate con Feijoa, a chocolate tart paired with Colombian feijoa ice cream.
Service throughout the evening was warm and engaging, which made our first proper introduction to Colombian cuisine even more enjoyable. I always like a meal that teaches me something new without feeling like I am attending a lecture. Latido did exactly that.
Date nights are partly about spending time together, but discovering a new cuisine together makes the evening that little bit more memorable. Colombia is still a long flight away, but for one evening, Tras Street brought us a little closer.
