This is @makoeats' current favourite "roasted" chicken rice which is served by a super friendly and hardworking single mother.
Chickens are first poached and hung in the open to dry the skin. They are then "bathed" in hot oil until skin is nicely browned. The resulting delicious "wrinkled-skin" chicken is served with a sauce mixture of soya sauce and sesame oil. Eaten with fragrant rice and the owner's homemade bright-orange garlicky Thai-style chili sauce, yum!
