Tiffin Room @ Raffles Hotel

Holi is all about colours, celebration, and of course, food! And what better way to experience it than with a feast at Tiffin Room in Raffles Hotel, where Chef Kuldeep Negi has crafted a special menu that takes you on a flavour-packed journey through India. Available only from 3 to 16 March 2025, this limited-time feast brings together vibrant North Indian classics with a few creative surprises.

Dinner started with a chilled Coconut Lassi, creamy and refreshing, the kind of drink that makes you pause for a second just to appreciate how good it is. Then came the Mawa Chaat - deep-fried milk dumplings that look unassuming until you get a bite of the sweet, savoury, and tangy mix of tamarind chutney, mint, and yoghurt. Think gulab jamun but reimagined as a street snack. Paired with La Margarita, a tequila-based cocktail with a chilli-lime kick, the combination was surprisingly addictive.

For appetisers, the Tangdi Kebab was grilled beautifully, with that slightly charred, smoky aroma that makes you eager for the next bite. The Machi Pakora (cheese-stuffed red snapper) was crisp outside, melting inside, with a hint of spice to keep things interesting. Vegetarians aren’t left out either - there’s Paneer Pakora, crispy cottage cheese bites stuffed with spiced cheese, and Dahi Kebab, rich and creamy with a peppery mint chutney. A glass of Sancerre Rosé tied everything together, its bright acidity balancing out the layers of spice and richness.

Then came the main event - comforting, bold North Indian curries. Tambda Rassa, a fiery Maharashtrian-style lamb curry, had a deep, slow-cooked intensity that made me reach for more naan (and maybe wipe the bowl clean). The Murgh Hara Pyaaz, a chicken curry with spring onions and cashews, was smooth and fragrant. The Jhinga Pudhina Pulao, saffron-scented rice with prawns and fresh mint, was a showstopper - each grain fluffy, with just the right balance of spice and aromatics. And for those on the vegetarian menu, the curries are just as indulgent, with a selection of lentil, chickpea, and paneer-based dishes that don’t hold back on flavour. A sip of Rioja Gran Reserva added a nice depth, rounding off the meal beautifully.

To wrap up the feast, a plate of traditional Holi desserts - Moong Dal Halwa, warm and nutty, Gujia, a deep-fried pastry stuffed with coconut and dried fruit, and Kalakand, a creamy milk cake with a saffron twist. Sweet, nostalgic, and the perfect way to end the evening.

A truly indulgent way to celebrate Holi - one where every bite, every sip, and every moment felt like a festive celebration. Whether you go for the Flavours of Holi Menu (S$135++) or the Vegetarian Menu (S$125++), expect a feast for the senses. And if you are in the mood to elevate the experience, the alcoholic beverage pairing (S$98++) adds another layer of fun to the meal. But it is only available for two weeks.
