Dinner at 炳胜品味 at their 海印 main outlet was not part of the original plan.
Earlier that afternoon, we were hiding from the heat in a small neighbourhood cafe. The owner chatted with us, asked where we were from, and without hesitation told us where we should eat that night. No map, no sales pitch. Just a simple “go there, you will enjoy”. Those are usually the best recommendations.
The building itself already sets the tone. A multi storey restaurant, brightly lit, buzzing with families, business diners and groups of friends. It felt serious but not intimidating. This is clearly a place where people come to eat well, not just to take photos.
We started with their signatures. The roast pork was excellent, with a clean crackling and juicy meat beneath. The char siew was glossy and fragrant, sweet but not cloying. The roast goose was deeply flavoured, tender and done with confidence. These are dishes many places serve, but here you can tell they have been refined over years of experience.
We did not stop there. Roast pigeons arrived hot and crisp, a dish that always feels comforting in a Cantonese meal. The turbot cooked in a claypot was simple and honest, letting the fish speak for itself. The morel tofu pot was soothing and earthy, and the pork ribs rounded off the meal nicely. Everything felt balanced and thoughtful, like a well rehearsed orchestra.
This outlet has earned Michelin recognition, and it makes sense. Not because it feels fancy, but because it does the fundamentals extremely well, consistently, at scale. That is not easy.
Even though we were already full, I could not stop myself. Out came the Cantonese snacks and desserts. Silky ginger milk pudding, warming and soothing. Polo buns with that crumbly sweet top. Egg tarts with flaky crusts and soft centres. Shengjian buns and a tray of local pastries that felt like a quiet nod to tradition.
We left the restaurant slow and happy, the kind of full that comes from a good meal and a good tip shared by a stranger.
