Pichon Comtesse Wine Dinner

It was a wonderful evening at Laurus Table, the fine Italian restaurant located at The Laurus, Singapore’s first The Luxury Collection-branded resort on Sentosa Island. The dinner was presented by Pivene Wine and featured an exceptional line-up from Château Pichon Longueville Comtesse de Lalande, with winemaker Nicolas Glumineau sharing stories behind each vintage.

We started with warm rosemary focaccia and a glass of 2016 Réserve de la Comtesse. The wine was smooth and lively, a perfect start to the evening. The smoked beef carpaccio with ricotta and pear matched its freshness and subtle oak beautifully.

The risotto alla Milanese with veal ossobuco was creamy and rich, yet the touch of lemon lifted the flavours and gave the dish a lovely balance. It paired wonderfully with the 2018 Château de Pez, whose freshness and structure complemented every bite.

The highlight of the evening was the branzino in crosta di sale. The whole seabass, baked in a crust of sea salt, wild fennel and lemon, was presented tableside and filled the room with aromas of herbs and citrus as the crust was opened. The fish was moist, tender and perfectly paired with the 2017 Comtesse de Lalande, elegant and refined with a long, graceful finish.

Next came the organic saltbush lamb loin coated in herbs and served with basil gnocchi and roasted tomato confit. Two vintages, 2014 and 2008 Comtesse de Lalande, were poured side by side. The 2014 was lively and youthful, while the 2008 showed a softer, mature charm that lingered beautifully.

Dessert was a limoncello tiramisu, light and refreshing. Just as we thought the evening had ended, RWS Beverage Director Yuta-san delighted everyone with a bottle of 1978 Comtesse de Lalande. The wine was still elegant and full of life after nearly fifty years, its depth and finesse leaving a lasting impression.

A night of fine food, conversation, and the enduring charm of one of Bordeaux’s great estates.
