Osteria Mozza

I had one of those dinners that felt like déjà vu. It was familiar, but better with time. We were at Osteria Mozza, tucked inside the newly revamped Hilton Singapore Orchard (yes, that’s the old Mandarin Orchard and yes, I made the rookie mistake of turning up at the old Hilton first).

The evening was a five-course wine dinner featuring Vietti wines from Piedmont - elegant, layered, and full of personality. Twelve years ago, we attended a similar Vietti dinner when Francesco Cordero was still the face of the winery, pouring stories with every glass. Tonight, it felt like reconnecting with an old friend. Same spirit, same soul, just aged beautifully.

Dinner began with Grilled Octopus which was tender with just a hint of char, sitting on boiled potato with celery leaves and scallions. From the Mozza bar, came Burrata paired with Japanese sweet potato, fried kale and hazelnuts, a perfect play of creamy, crunchy and earthy.

Then came the Maltagliati with Duck Ragù, rustic and deeply comforting, followed by Wagyu Tagliata with arugula and Parmigiano Reggiano. It was simple but perfectly cooked and seasoned with confidence.

Dessert was Butterscotch Budino. Rich caramel, crème fraîche and a sprinkle of sea salt, the kind of sweet finish that makes you pause before that final spoonful.

Each course found its match in Vietti’s lineup, from the crisp Arneis to the graceful Barolo, reminding me once again why Italian food and wine make such beautiful companions.

It was a night of fine food, good wines, and old memories all served with a little laughter over a wrong turn on Orchard Road.
