馥苑 Fu Yuan Teochew Dining

The group picked Fu Yuan at Clarke Quay for my birthday dinner this year, and the moment I walked in, I knew the night was off to a good start. The interior felt modern and polished with dark marble tables, gold accents, and a touch of glamour that you don’t usually get with Teochew dining. A little atas, but still warm and comfortable for a long meal with people I love.

The food arrived dish after dish, and a few signatures really stood out for me. First, the live goby fish. The fish was deep-fried till crisp, then finished in a cloudy, collagen-rich shark cartilage soup. The crispy skin and milky broth was such an enjoyable contrast. Then came the Boston lobster with vermicelli, steamed just right so the meat stayed sweet and springy. The vermicelli soaked up every drop of seafood essence. But the dish that surprised me most was the double-boiled salted vegetable pig’s stomach soup stuffed with French poulet. Comforting, peppery, and full of body. A labour-of-love kind of soup.

Service was warm and attentive throughout - plates changed, tea refilled, and staff always ready to check in without hovering. It made the dinner feel personal, like we were being hosted rather than merely served.

Overall, Fu Yuan is not the most old-school, purist Teochew restaurant. The flavours lean slightly modern and crowd-pleasing, but it works. For celebrations and family gatherings, it is a very decent option especially if you enjoy fresh seafood and well-executed soups.
