While their signature combination beef noodle was delicious, the hefty price tag of $30 before tax for a small portion left me pondering an alternative — why not try my hand at cooking braised beef at home?
Determined and armed with beef shank (golden coin) and tendon sourced from the local wet market, I embarked on my culinary adventure. Gathering fresh ginger and garlic, dried chili, a medley of three peppercorn varieties, cinnamon, star anise, cloves, and cardamom, I devoted three hours to braising the beef shank and tendon until they reached tantalizing tenderness. Off the heat, I allowed the flavours to meld overnight, deepening the richness of the dish.
The following day, as anticipation filled the air, I reheated the pot, filling my home with a mouthwatering aroma. To further elevate the experience, I added sliced daikon radish, allowing it to absorb the incredible braising sauce. The result?
