Claypot Garoupa

I love cooking with a claypot. The claypot does not just cook the food, it binds the ingredients together and envelopes each of them in a blanket of warmth that results in incredibly tender and flavourful bites as they share the heat.
 
Last night was all about rekindling memories with a claypot, just like how my late father used to make. I cooked a giant garoupa fish surrounded by a mix of veggies, roast pork belly, and beancurd sticks. It was comfort in a pot, reminding me of days when Pa would cook similar feasts for us.
 
Pa loved adding roast pork belly into his claypot dishes. It worked so well, contributing a smoky richness to the dish. The sauce paired so well with steamed rice, I could not help but think the old man would definitely have approved this. It had that balanced, comforting taste that makes you want to go back for more.
 
It was a comforting family meal, much like those meals at Pa’s table - the kind of cooking that makes a house feel like a home.
