The omakase at Ganko Sushi was an experience that reminded me why Japanese cuisine is all about balance, precision, and respect for ingredients. The evening started with a quiet sense of anticipation as we settled into the cosy space - calm grey walls, warm wooden accents, and those wave-like sculptures hanging from the ceiling, mimicking the ebb and flow of the ocean. The minimalist decor and the hushed tones of the staff created an intimate and calming vibe.
We began with Chutoro with Ponzu Sauce, a rich yet balanced bite. The chutoro was fatty and buttery, and the ponzu’s acidity cut through it beautifully, waking up the palate. Then came the sashimi course, each piece carefully sliced and artfully presented. The freshness of the seafood was unmistakable, with the sweetness of the prawns and the creamy texture of the fish leaving a lasting impression.
The highlight for me was the Tara Shirako, a true Japanese delicacy. Often called the male equivalent of caviar, shirako is cod milt, and while it may sound intimidating, the taste was delicate and creamy. The velvety texture and subtle brininess were perfectly complemented by the clean, minimalist plating.
Next was the Chawanmushi with Ikura - silky smooth egg custard with pops of briny sweetness from the ikura. The contrast of textures was spot-on. Then came the Tempura course - a light and crispy combination of seasonal fish, lotus root, and shishitou pepper.
The grilled eel was beautifully charred and glazed with a sweet-savoury sauce that lingered on the tongue. The cold dish of wagyu beef and turnip was comforting, with the earthy sweetness of the turnip balancing the tender, umami-rich wagyu.
Then came an array of sushi. The sea bream was clean and subtle, the horse mackerel had a pleasant richness, and the otoro was an indulgent melt-in-your-mouth moment. The scallop was sweet and creamy, while the bara gunkan was a flavour bomb wrapped in nori.
Dessert was a seasonal treat - simple and refreshing orange with jelly, the perfect way to round off an indulgent meal.
The service was thoughtful without being intrusive. The chefs were warm and quietly confident, letting the food speak for itself. For an omakase at this price point ($110++ promo), Ganko Sushi delivers both in terms of quality and experience.
