I took note of the dishes and ingredients that brought sparkles to her eyes during our recent restaurant visits and curated this 3-course menu for Mrs C&S's birthday dinner last evening.
She enjoyed the Hamachi Ceviche at Mezcla and the refreshing watermelon that was paired with Hotate Sashimi at iKo. I took inspiration from both dishes and made this refreshing starter to kick off the dinner. Hamachi Ceviche with ikura, guacamole and watermelon. I simply cured and marinated the gorgeous yellowtail loin slices with lime juice, Japanese soy sauce and extra virgin olive oil and plate it with the rest of the ingredients. The citrusy and buttery Hamachi ceviche is already delicious on its own. When combined with the umami burst from the ikura, the nuttiness and creaminess from the guacamole and the sweetness and crisp texture of the cold watermelon, the whole dish just created such an explosion of flavours in the mouth.
I am not a big fan of pork rack and chop as it can be dry and tough unless you brine and do a slow roast (of course there are other ways). She had asked for it on a few occasions before this so I must not disappoint her on her special day. I marinated and vacuum-sealed the Iberico Pork Tomahawk with salt, pepper, garlic powder and paprika and sous vide the bone-in steak at 60C for 2 hours before searing it over a very hot skillet and served with potato paves and mango salsa.
We had this interesting dessert at Le Bon Funk recently. Wife loves the idea and the combined taste of chewy Asian Mochi with delicious Italian Mascarpone cream, so I decided to create my own version for this dinner. I made sweet potato mochi from scratch using steamed sweet potato and glutinous flour. The boiled mini sweet potato rice balls were then soaked in Gula Melaka syrup and stored in the fridge. To serve, spoon the chewy Mochi and sweet Gula Melaka syrup into Martini glasses and topped with Mascarpone cream and grated brown butter.
