Han and Chelsea, a spirited young couple, embarked on this culinary journey in February 2022. Drawing inspiration from the luscious, creamy Japanese Tonkotsu Ramen broth, they introduced a unique minced pork noodle with a rich and thick soup that quickly found its way into the hearts (and stomachs) of many.
Success seemed to smile upon them as they expanded to Punggol and Bedok this year. But as with all tales, there were challenges to face. Due to the age-old culprits of manpower shortage and exorbitant rentals, both new stalls had to be closed within months of opening.
Back at their flagship stall, the couple decided to shake things up a bit. Deep-fried fritters found their way onto the menu, a crunchy companion to the beloved Bak Chor Mee.
But change is the only constant, as they say. With the Bukit Merah coffeeshop changing ownership and the looming spectre of increased rent, the future of No. 25 Minced Pork Noodle hangs in balance. As much as food and wine are about taste, the reality of economics plays its role. Han and Chelsea find themselves at a crossroads, contemplating the stall's future.
