Chef Ignacio Echapresto and his team have crafted three menus for this season, each inspired by different parts of the plant - Roots, Leaves-Flowers, and Fruits. Our group selected the "Roots" Menu, a culinary voyage that would transport us back to the restaurant's origins, celebrating the village cuisine, tradition, and the honest flavours of their culinary heritage.
The nine-course menu, priced at €110.00, promised to be a symphony of taste and texture. From the very first bite to the last, we were taken on a gastronomic journey that revealed the deep-rooted connection between the restaurant and its surroundings. Each dish was meticulously prepared, showcasing the finest local ingredients and paying homage to the culinary traditions that defined the region.
As we embarked on our culinary odyssey, the attentive service and expert sommelier guided us through an impeccable wine pairing experience. Priced at €65.00, the wine pairing showcased a selection of Rioja wines and meads, with a delightful exception - a Riesling from Mosel, Germany. The sommelier's expertise shone through as each sip perfectly complemented the flavours on our plates, elevating the dining experience to new heights.
