When Asia Grand closed its doors at Odeon Towers in the beginning of 2022, many of us were very disappointed. Over the years, this has become one of our favourite Chinese restaurants for their authentic Cantonese cuisine and free corkage for BYO wines.
So when Andy from Asia Grand texted me about a fortnight ago that the restaurant had reopened at Fairmont Singapore, I immediately made a couple of reservations with him.
Although the location has changed, the overall ambience and serving staff are still so warm and familiar. Of course we cannot miss the evergreen Peking Duck promotion (Price has gone up to $58/duck from $48), our must-have to start our dinner here.
I left it to Andy to curate the rest of the menu for our group of drinkers as I know he would not disappoint. The stewed wagyu brisket slices were beefy, amazingly flavourful and tender while the claypot soup that the brisket was served in was light with a mildly sweet herbal taste.
I love claypot dishes and was excited when Andy suggested that we had this Claypot grouper fish head and belly with garlic and salted fish. A very Hong Kong style dish that I could resonate very well with.
The huge sashimi-grade scallop was stir-fried in umami-packed XO sauce. Real tender and juicy and served on bed of crunchy Hong Kong Kai Lan.
Salt-baked chicken is a humble Cantonese and Hakka dish. Here the chicken emerged surprisingly succulent with delicate smokey flavours from the salt.
I asked Andy for some carbs to end the dinner but he politely rejected the idea and said,"Let's just cook the remaining meat from the Peking duck in salt and pepper (椒盐) to go with the wines you brought."
Grateful for his usual thoughtfulness, I am already looking forward to my next dinner here next week.
