Bon Broth

I finally made my way to Bon Broth at Raffles City - the new hotpot restaurant by Chef André Chiang that everyone has been talking about. Stepping into the restaurant felt more like entering a fine-dining lounge than a hotpot restaurant. Here, everything starts and revolves around the broth.

The evening started unlike any other hotpot meal. We were ushered to the broth selection counter where a broth sommelier guided us through a tasting flight of soups. Imagine a wine tasting, but with broths, each layered, complex, and full of character. From the herbal to the spicy Sichuan green pepper, the delicate Hokkaido to the punchy satay. We swirled, sipped, and finally picked our favourites before being seated for dinner. Already, it felt like an experience.

We went for the Premium Set ($138++), which came with an impressive spread of sliced wagyu and Iberico pork, prawns, scallops, clams, abalone and half a lobster, along with trays of crisp vegetables, handmade tofu skin, mushrooms, and udon. Everything was beautifully arranged in wooden boxes, like a treasure chest of freshness. The seafood was so fresh it was almost too real. My lobster was twitching throughout dinner, and I could not bring myself to eat it. The compassion in me won that round, so the lobster lived to tell the tale.

There were no sauces served unless you requested for them. The philosophy here is simple - if the broth is perfect, you should not need them. But we still requested! Not that the broth was not good, but we were too Singaporean not to have sauces. Some habits are hard to let go! And honestly, the broth delivered. It was comforting yet elegant, rich yet balanced, and every dip of meat or seafood tasted complete on its own.

The space itself was beautifully designed with cosy sleek circular counters, softly lit, and quietly buzzing with diners leaning over their little pots. You could almost forget you were in a mall.

Bon Broth is not your typical hotpot. It is slow, refined, and built around the kind of patience and precision Chef André Chiang is known for. For those who think hotpot is just about boiling ingredients, this place will change your mind.
