We were back at Imperial Grand - That nostalgic spot where old-school Cantonese cuisine mingles with the irresistible call of karaoke. On this latest culinary escapade, we danced through a menu that ranged from intriguing to delectable.
Let's kick things off with the suckling pig, a dish that usually steals the limelight in Cantonese cuisine. It was a good effort, but it didn't hit all the right notes for me. The skin was crispy but it missed that ultra-smooth, glossy finish that can only be achieved by patient roasting over an open flame. Instead, it felt more biscuit-like. My best guess? This little piggy was likely cooked in an electric oven. Overall it was alright, but I have had better.

Boiled Pig Stomach Soup Stuffed with Whole Chicken Soup was so milky and robust, it felt like a hearty embrace from the inside out. The whole chicken within the pig's stomach had infused the broth with an essence that spoke volumes. It is a labour of love, boiled for hours to achieve that perfect texture and flavour.

Don't miss the Deep-fried Boneless Chicken Stuffed with Minced Prawns if you are placing a pre-order. This dish is an old-school marvel. Imagine a whole chicken, skillfully deboned and its skin removed in one piece. A generous layer of rich prawn paste takes its place, and the skin is draped back, ready for deep-frying. The result? A golden, reassembled "whole chicken" that is as visually stunning as it is delicious. Each bite blends the crispy chicken skin with the soft, flavourful prawn paste, delivering a nostalgic culinary experience that is hard to forget and a testament to the timeless artistry of Cantonese cooking.

We couldn't resist going back to some tried-and-tested favourites - Peking Duck and Steamed Fresh Garoupa with Ham. These are Imperial Grand’s comfort zones, and they never disappoint.

To round off our meal, we opted for Deep-Fried Yam Ring with Prawn in Sweet and Sour Sauce, Homemade Beancurd with Scallop and Wild Mushroom, and Fried Spinach Veg with Egg White and Wolf Berry. Each dish was a loving nod to yesteryears.

So, if you're looking to get lost in the good old days, while belting out a tune or two, Imperial Grand is where you need to be. It's a place that celebrates the past but is never stuck in it, offering dishes that evoke fond memories, with a side of unforgettable karaoke.
