Lunch within the enchanting medieval walls of Carcassonne turned out to be a delightful surprise. Stumbling upon La Demeure du Cassoulet, we were treated to a hearty meal that perfectly matched the chill of winter. The highlight was their Gourmand Cassoulet - a comforting dish of tender duck confit and foie gras atop a bed of slow-cooked haricot beans, sausage, and pork. This rustic classic warmed both our hands and hearts, making it one of the most memorable meals of the trip.

The other dishes were equally impressive. From the beautifully grilled meats to the delicate balance of flavours in their vegetarian tart, the care in preparation shone through.
