Brasserie à 4 Temps
Our first dinner of the trip was at Brasserie à 4 Temps in Carcassonne, and despite our jetlagged bodies and the biting cold winds outside, it turned out to be the perfect way to settle into this adventure. It was our first night, and while we were still adjusting to the chill in the air and the new rhythm of travel, the warmth of the brasserie welcomed us like a cosy embrace.
The MICHELIN Guide-listed restaurant was glowing with festive decor, and the modern skylit ceiling paired with vibrant red accents created a cheerful yet elegant ambience. We settled in, weary but eager, and were treated to dishes that comforted and delighted.
The meal was a showcase of French culinary craftsmanship. The beef tartare was beautifully seasoned and bursting with flavour, the scallops were seared to perfection and paired with a creamy butternut squash purée, and the grilled dry-aged côte de boeuf was succulent, hearty, and deeply satisfying. Even the simplest touches, like the layered potato gratin, were executed with such finesse .
This was a perfect introduction to Carcassonne and left us eager to explore more of what this beautiful city has to offer.
