Long Weekend

A long weekend calls for a special dinner, even when I am not feeling my best. So, with a touch of culinary simplicity and a dash of family warmth, I 'cooked' up a reminder of sunnier days in Spain. The Gambas al ajillo brought a sizzle to the table, their garlicky oil a perfect match for the wife's crusty homemade sourdough. The white asparagus added a tender contrast, their delicate flavour a nod to the onset of spring.

Then came the Jamón Ibérico, each slice a rich, savoury testament to the art of curing. And the canned seafood? A bite of the ocean, unassumingly dressed and yet so full of flavour. The burrata sat like a soft cloud on the plate, begging to be torn apart and savoured with a sprinkle of pepper and a dash of olive oil.

It is in these moments, over shared dishes, that we find the comfort of family and the true essence of recovery. To good health and great food, always. Cheers!
