Mensho X officially opens its new outlet at Resorts World Sentosa today, and I brought my kids there for lunch to check it out. We have always enjoyed Chef Tomoharu Shono’s inventive take on ramen, and this new menu features his latest creation - the Tantan Mochimen, made with chewy noodles from mochi wheat.

Tucked inside WEAVE Mall, the space feels bright and relaxed, with warm tones and that familiar hum of an open kitchen. From our seats, we could watch the chefs work in quiet rhythm, every move deliberate, every bowl prepared with care.

We started with one of the outlet exclusives, the Wagyu Tantan Mochimen. Served without soup, the thick, chewy noodles had a lovely bounce. Tossed in a rich sesame-peanut sauce and topped with wagyu chashu, smoked nuts, and a hint of Sichuan pepper, it was creamy, nutty, and deeply satisfying.

We also had the Yuzu Shio Ramen and Organic Shoyu Ramen, both using delicate thin noodles that suited their lighter, clearer broths perfectly. The Yuzu Shio had a clean, refreshing base made from bonito, clam, pork, and chicken, lifted by bright yuzu accents. The Organic Shoyu, on the other hand, offered a rounder savoury depth, thanks to the barrel-aged shoyu and balanced broth.

The sides were just as enjoyable. Crispy Ama-Ebi, light and crunchy Japanese sweet shrimp with creamy aioli, and Crispy Fried Tako Calamari, golden and addictive with a touch of nori.

And then came the Fire Bird Ramen, not a Sentosa exclusive but easily my personal favourite. This one uses thicker wavy whole-wheat noodles, which pair beautifully with the creamy, mildly spicy broth. Thin noodles are perfect for light soups, but here the thicker ones gripped the broth perfectly, giving every bite that satisfying chew.

From the chewy mochimen to the citrusy yuzu broth and fiery comfort of the Fire Bird, Mensho X at Sentosa brings together craft, warmth, and flavour in every bowl. A new ramen spot well worth the trip across the island.
