The success of a restaurant is dependent on what it puts out for the customers to see, touch, feel, and taste. At 藝 yì by Jereme Leung, the dining experience starts from the moment I step in the door. Thousands of handcrafted and individually strung white floral strands hung from the ceiling runs across the entire restaurant’s entryway. I really feel like I am in an enchanted, dreamlike fairy tale, that "自在飞花轻似梦" kind of feeling.
When I am seated, I know that a really enjoyable dining experience awaits me when everything, from tablecloth to utensils, has been carefully laid out. While the interior especially the grand entrance is clearly amazing, the beautiful presentation of the dishes is as instagrammable too.
The hundred-ring cucumber & poached sea whelk with soy sauce vinaigrette is Chef Jeremy's signature cold dish. The classic Chinese cold dish, which is popular in northern region of China during warm summer months, is given a modern artistic twist with the whole cucumber skillfully sliced thinly to form an intricate continuous spiral. Topped with poached sea whelk and immersed in a tangy homemade vinaigrette, this is very refreshing and tantalizing both to the eyes and the palate.
Traditional Peking duck is served with the crispy skin painted with edible gold. Wrap the prized duck skin with cucumber and honeydew strips in freshly steamed rainbow pancake made with various vegetables, from which the different natural colours are extracted. Besides the usual Peking duck dark sauce, you can also dip the duck pancake in an unique Yunnan Rose and Fermented Bean Sauce which gives the dish a floral touch.
Other dishes worth checking out include wok-fried Iberico pork jowl with dried chili, claypot tiger prawns with fiery chili pickled sauce and the peppery pig stomach and fish maw soup with luffa melon.
The modern sophisticated yet poetic interior coupled with Chef Jeremy's creative and artistic twists on authentic and ancient dishes from across China make 藝 yì one of my favourite fine Chinese restaurants in Singapore.
