Nestled in the culinary landscape of Singapore, Abundance presents a tableau of Taiwanese fusion that tantalises the taste buds of all ages. With the advent of December 2023, a new chapter begins in their flavourful story, as both their Redhill and Jalan Besar locations unveil an array of new dishes.
The Golden Chicken Mee Sua (麻油花雕鸡面线) is a triumph, capturing the essence of a heartwarming confinement dish with its succulent chicken thigh, aromatic sesame oil, and a generous pour of premium Shaoxing Hua Diao Jiu. Topped with leek, black fungus, and goji berries, each spoonful is a celebration of maternal nourishment and care.

In a delightful contrast, the Herbal Braised Pork Rice (药炖卤肉饭) is a luxurious take on the classic Taiwanese Lu Rou Fan, enriched with a herbal concoction reminiscent of Taiwan's night market soups. The pork belly's slow simmer in dang gui, ginseng, wolfberry, lotus, and red dates transforms the dish into a medicinal feast, served alongside pickled cucumber, a perfectly pouched egg, and garnished with Taiwan garlic sausage over Japanese pearl rice.

The new Empress Sprouts with Crispy Garlic (蒜炒帝王苗) is a testament to Abundance's dedication to fresh produce. Handplucked, de-stemmed, and stir-fried with a flavourful chicken stock, the sprouts are perfected with a sprinkle of crispy garlic, creating a dish that is as nutritive as it is indulgent.

As we revisited the restaurant's beloved classics, it was evident that their charm remains undiminished. The Dumpling Noodles, with their fresh "knife-shaved" noodles and luscious pork and shrimp dumplings, continue to be irresistibly addictive. The Red Hot Chili Dumplings deliver a familiar thrill with their generous filling and Sichuan-inspired heat, while the Salt and Pepper Squid crackles with its well-known zest.

Our culinary ballet would not be complete without the Bacon Cabbage, a dish that has become a staple in our visits. The wok-hei stir-fried cabbage, intertwined with bacon and chili oil, is a smoky sensation that we cannot forego.

Concluding our gastronomic odyssey, the peanut and black sesame ice cream rolls served as the perfect sweet ending. These rolls are a playful twist on tradition, wrapping up the meal with a blend of creamy and nutty notes that dance on the palate.

Abundance’s repertoire, both new and old, is a culinary sonnet that sings the praises of Taiwanese cuisine. It is a place where each visit is a voyage, a chance to indulge in the familiar while embracing the novelty, ensuring that every departure is accompanied by eager plans for a return.
