Niu Bi Again

We found ourselves back at Niu Bi again, this time to try their new Friday-only item, the NB Curry Beef Ramen. What started as a collab at Quah Song has now become a weekly staple here. The broth is slow-brewed, rich, and layered with spice. Not the kind that overwhelms, but the kind that creeps up slowly, warming you from the inside.
 
We also had the Gold Spice Ox Tongue Noodle. Thin slices of tongue, tender with a gentle bite, tossed with spiced chili that added both fragrance and kick. A little bold, a little cheeky - very Niubi.
 
And of course, no visit is complete without the Signature Mix. That comforting bowl with beef slices, tendon, tripe, and beef balls is Lincoln’s anchor - the dish that reminds you this young hawker is still rooted in tradition, even as he experiments with new flavours.
 
The whisky bar setting upstairs at Amoy Street still feels like a hidden spot with shelves of bottles glowing in the background, leather seats inviting you to stay a bit longer. It is an unusual pairing. Beef noodles in a whisky lounge, but somehow it works, and works well.
